Summer days are great, but have you ever been to a beach bonfire on a summer night? Magical. The Bonfire cookie captures that soft, gooey, roll-eyes-in-back-of-head yum of the S’mores with a hint of smoked sea salt to take you right back to those heady beach nights of smoke and stars and sand. Ah, summer.

I can’t get to a tropical beach haven right now, so I brought it to a cookie. Look, strawberry milkshakes are *the* taste of summer for me. Can’t bake ice cream (or ship it), so I got as close as I could with oven-friendly ingredients. The Strawb is a white choc chip cookie speckled with dried strawberries and a strawberry ganache filling. Voila, bring your boys to the yard.

Straight from the Garden of Eden (allegedly), pistachios have been a dreamy treat as long as humans have munched nuts. Even the Queen of Sheba loved them — so much so that she declared them a royal food. You deserve a royal food, friend. Especially when nestled in a soft, chewy chocolate cookie.
*Can also be called The Pistachi-whoa if flabberghast and shock are the things you’re feeling.
The Rhymes-With-Cry: Chocolate with spicy-sweet chai cookie delight
The news is spicy and rarely sweet, but this cookie is both. This spicy choc number has all the good stuff: cinnamon, allspice, cloves, ginger, black pepper, and even a lil cardamom. Set down the doomscrolling, take a breath, and nibble on this number.
The Peanut Blubber: Chocolate hugs a chewy peanut butter cookie center
Man, who doesn’t need a hug? Peanut butter is certainly a hug for your mouth — delicious and salty-sweet and, like some people, perhaps clings a little too long. Not this cookie, though — it’ll go down so smooth and yummy, even between gulps of air and streams of tears. There, there. All better now.
