This cookie & I… have been on a journey. Shredding carrots, measuring just the right mix of ground oats and flour, fussing with levels of vanilla vs maple extract. Straight from the Garden of Eden (allegedly), pistachios have been a dreamy treat as long as humans have munched nuts. Even the Queen of Sheba loved them — so much so that she declared them a royal food. You deserve a royal food, friend. Especially when nestled in a soft, chewy chocolate cookie.
